Kipfle
(a pastry)

Ingredients:

Soak yeast in warm water with sugar, allow to rise in the cup.

Cut margarine into mixture of flour and salt to make coarse flour mixture (as for pie crust). Add the yeast mixture and work dough into a ball. Then add warm water to make a dough similar to pie dough. Knead well. Dough should not be sticky, but easily work off your hands. May require more flour while working the dough.

Allow dough to rise for about 30 minutes. Cut into 4 parts, roll out each part on a floured board in a circle, then cut out in wedges. Roll from the outside into middle and bend slightly to make a crescent shape. Makes about 30 pieces.

Using a pastry brush, brush with egg white, and sprinkle with coarse salt and caraway seeds (if desired). Place on greased cookie sheet and allow to rise for about a half hour. Bake at 350 degrees for about 20 minutes or until golden brown. Remove from cookie sheet 5 minutes after removal from oven.
